Spinach is easy to incorporate into daily meals and has excellent nutritional benefits.

I remember being young and eating spinach because that’s what Popeye did to get strong. But when I did eat it, it was only one fork full, and I plugged my nose so I wouldn’t have to taste it too much. It may be because of maturing taste buds, but now spinach is one of my favorite foods to eat. 

Part of the reason that I love spinach is it’s nutritional benefits.  Spinach is a supper food that contains calcium, folic acid, vitamin K, vitamin C, iron and fiber. These are all important for a healthy heart!

It’s great all day! 

I eat spinach in the morning with my scrambled egg whites. The eggs provide the protein to kick start your day and the spinach provides some of the vitamins to keep you healthy. Spinach also adds it’s own flavor to the dish so that you can use less salt!

For lunch, I love to sub spinach leaves in for lettuce in my salad. I enjoy it’s rich flavor and in my experience a spinach salad goes great with a low fat Italian dressing. Just be sure not to load on the croutons, and you have yourself a healthy lunch!

At dinner, I put spinach in the whole grain pasta dish that I make. It adds great flavoring and also increases the aesthetics when placed in red sauce.

As with anything, eat with moderation!

P.S. I haven’t exactly found a desert that spinach tastes good in, but if you know of one let me know!
