Winter Wine Pairings

There is nothing better than warming up with a hearty meal and a warm glass of wine. Here are two of my favorite cool weather recipes and wine pairings:

 

Roasted Lamb Rack with Norton

Spices

2 tsp Rosemary – chopped

2 tsp Thyme – chopped

2 tsp Oregano – chopped

2 tsp Kosher Salt

1 tsp Cracked Black Pepper

 

 

1 Rack Lamb Chops - frenched

2 tbls Dijon

 

 

Mix spices together in small bowl and set aside.

Usually a rack of lamb will have 8 chops (8 bones). You can figure 2 bones per chop when cutting the rack after cooking. 2 Chops per person. I recommend domestic lamb.

Season the lamb with salt and pepper. Rub the Dijon mustard all over the meat of the rack. Generously rub the spices over the lamb.

Cook lamb rack at 325ºF for 20-30 min or until lamb reaches an internal temperature of 120ºF.

 

 

Autumn Pork Roulade with St. Vincent

Serves 2

 

1 Pork Tenderloin

1 small Bell Pepper – julienned

1 apple – julienned

½ cup frozen cranberries

1 cup spinach

½ cup Feta

 

Butterfly and pound pork out until it’s ¼ to 3/8 inch thick. Season both sides with salt and pepper. Sautee bell peppers, apple and cranberries until tender (about 5 min). Add spinach and season. Arrange mixture on pork in a flat layer. Sprinkle feta over mixture. Roll pork up tight and tie ends and center with butcher twine. Roast in pre-heated 350 degree oven for 25-35 min or until done in middle.
