Daily Dose: Quintessential Chef Shares Secret to Jambalaya

head chef Bryan Smith offered up the secret to the restaurant's much-loved jambalaya dish in the St. Louis Post-Dispatch yesterday. Turns out, it's in the slow cooking that the flavors come out.

Last year, Patch interviewed Smith and he said he loves that he has the ability to experiment in the kitchen.

“I want to keep them empowered, so I let my cooks bring in whatever recipes they’ve created and use them for specials," he said in a that appeared last February. "If the feedback is good, it may end up on the menu. As long as it fits our theme, and they can reproduce it perfectly 25 times a night, I want to see what they come up with.”
