New Eco-Friendly Restaurant Opens in St. Charles

Prasino St. Charles opened to the public on Monday in the Streets of St. Charles development, located near the Interstate 70 and Fifth Street intersection.

Prasino St. Charles, the environmentally friendly restaurant that was announced to be coming to the Streets of St. Charles in January, is now open.

Prasino, which is Greek for "green", focuses on locally-sourced ingredients and uses organic, all-natural, steroid- and hormone- free foods.

The restaurant will be open for breakfast through dinner, serving up items like a roasted beet salad, short rib tacos, Wisconsin ribeye and sushi rolls. Hours are set for 8 a.m. to 11 p.m., seven days a week.

Prasino will be located in an 8,500 square foot space and will seat 280 inside and 90 outside. It is the second new restaurant to open at Streets of St. Charles in 2013—Tucanos Brazilian Grill opened in February.

The concept for Prasino, according to a release, originated in Chciago. Even its design is eco-friendly, with local, recycled, reclaimed or rapidly renewable materials used to create the environment; and environmentally-friendly paints and sealants used on the walls.

Aside from the menu, Prasino will also offer customers a unique beverage program, designed by a professional mixologist, that features locally-sourced spirits, beer and wine.

To celebrate the restaurant's grand opening, Prasino is offering a special Earth Dinner option through Friday. A portion of the proceeds generated from the special—a sustainably-sourced lobster stuffed avocado with chili beurre blanc and mango salsa—will benefit Chefs Collaborative.
